All ridge capping should be profiled to the roof, regardless of cyclone area or not... Thats actually incorrect, ridge capping doesn't need match the profile of the roof which is known as scribing by the way. I think you will find it just depends on what the local practice is in the area some plumbers do it others don't. As far as wind category's go im not sure if cyclonic areas need to or not.
