I need to tile my back yard around my pool. The pool coping tile is 35 mm thick and the tile I’m laying is 10mm thick so there will be 25mm under the tile. I can’t find a tile adhesive that can be laid that thick. Can anyone recommend a suitable product I could use. Would mortar work? Do I need to raise the level of the concrete with a self leveling product? First time taking on a project like this. Any advice will be much appreciated.

You'll need to lay a screed bed first and then tile.
I'd prime the existing concrete slab with bondcrete or similar primer and then lay in the screed bed allowing for tile and adhesive.
Screed is a fairly dry mix of sand and cement that can be spread out and levelled to a firm hard surface. It's the same principle that's used to get the falls in the wet areas inside a house.
