Because I don't want any aggregate showing, and would like the standard 'grey' concrete colour the concreter is saying that he will just pour the slab, finish it off 'very smoothly' and then seal it when done. It won't be ground or polished (because that will make the aggregate show) and he is suggesting it will be equally durable and good looking as polished or burnt concrete. Where you are coming from is where you are going to... To my understanding early saw cuts are to control shrinkage cracks, so doing them now would be pointless.
