I'd like to get the waterproofing, toilet and bathtub install professionally done, and tackle the tiling, taps and vanity installation myself (I have had some experience with these when doing my kitchen tiles, benches and sink). You could also do all the demolition/removal of old stuff, and put up new wall lining (if that is how far you are going), so long as none of the work is structural.
