What will look the best? I have attached a photo of our door. The left hand side we have removed and are considering whether to remove the right hand side for a bigger door. Short answer there's no right way to do anything like this, there's better finishes than others, you do what works and looks best for your bathroom as long as it's to code. Once the floor is tiles we will bring the bath in and re frame. Then we would need to add the door jam. The smaller door option means the door is 680 - is that to code?
