They have indicated that if they move it the way she would like it will leave only 700mm between the vanity and shower which they think is a bit tight. My wife points out this isn't much different to a door so she sees no issues. The first one is my wife's preferred layout. A smaller wall hung basin without storage or a semi-recessed basin would give you a bit more clearance but I'm guessing you don't want to give up cupboard space. I like your wife's layout but I think 700 is a smidge tight. Our current ensuite is the similar to the your standard layout but with the basin and the shower swapped, it gives good access to the basin but the shower door does hit the toilet, certainly no room to swing a cat.
