You should still have room for a double vanity along the towel rail wall. From the look of your plan you would need to move the door over to fit a full width shower in though. For the other bathroom are you having a free standing tub or a built-in tub? If you're going with a standard built-in, I would consider having the hob built to fit both walls at either end. You could extend the vanity bench over that end of the bathtub if you liked, and run the mirror the full length of the wall. I would definately try to extend the hob to the toilet wall as well though - otherwise it will just be a wasted space that will collect dust. At least with a large hob you can use it to put bath products or even some glass jars for decoration or something similar.
