You are somehwhat correct as you cannot lay tiles starting from one edge as you must not assume your walls are 100% square. So, if you lay a tile at the bottom left most corner of a wall, as you go up on that edge, you may find yourself with an increasing gap along that edge as you align the tiles on top of each other. Now, starting in the middle is generally a good idea but you need to make sure that by the time you get to the edges, you aren't going to be left with a sliver of a tile to fit in. Generally about half a tile on either edge/side is best. So to achieve this, you will need to make a few measurements (using a measuring tape) or a bit of trial and error using a tile and making some markings along the wall. Make sure you also include a few milimeters for the groute groove. To be sure you can do this on the top and bottom row to be sure. I've laid wall tiles from from the floor to the roof and you'll be surprised out how much variation there is. As far as removing the tiles, hmm not sure, but I'd dare say you won't be able to use the tiles again as you really need a clean surface for the glue to bond well and so you don't get uneven heights.
