If you get a plumber to tile and put in a new toilet, they'll probably tile first and sit the bowl on top (with approx 8-10mm gap, filled with silicon). I have never replaced P-trap toilets before, but would imagine that the distance between the floor level (whether concrete or tile) to the centre of the outlet would be pretty important to get right. The rubber diaphragm would be somewhat forgiving but if you find that you're too far out (ie not sealing well), you might be in big trouble.
