The wine room will be on our ground floor (not basement) between kitchen and dining and is quite small at 2m x 2.5m, with glass entry doors. It will need some kind of stability in temp so looking to see what options we have. Our builder has suggested a small split system air con just for the room. This seems to be the most economical option but the unit would be quite large on the wall and not quite the look we are going for. What temperature range are you looking to maintain? Have you considered a ceiling cassette split system? Can you build out a bulkhead and use a bulkhead split system? Nothing extremely fancy, around up to no more than $150 per bottle, screw tops (no corks). Just looking for a steady temperature (I think 14-16 was recommended). Never heard of a ceiling cassette split system, will google that now. We could build out a bulkhead. Haven’t heard of bulkhead split so will google that too. Thanks. You may be better off using a dedicated wine cellar cooler which is more medium temp refrigeration based. If you do decide to go with a split system for air conditioning, whether a high wall, ceiling cassette or bulkhead style, I'd suggest to only utilize on the lowest possible fan speed. Depending on what you clad the walls with, it would be best practice to install a vapor barrier behind to stop condensation issues which could cause mold issues To my understanding early saw cuts are to control shrinkage cracks, so doing them now would be pointless.
