To help answer your question I think the reason they have them in an open area is the thermostat is located in the vicinity to measure the ambient temperature of the air going into it. You can get different types of return air grilles i find timber ones look good because you can paint them the colour you want. By the way thermostat should'nt be located above the return either people put them there because it's easy to get the cable there.
