Great tips.
I now use a stone to sharpen my knives, but have always did it under a running tap.
I'll try it just on the bench with a pre soaked stone.
My issue is I don't know exactly what angle I'm sharpening at.
I've tried a handheld sharpening device once. Not only did it damage my knife, I also slipped and cut my finger.
Needless to say I went back to a stone.
