I think it must be a small, fiddly job because the first guy didn't come back to give us a quote after measuring up and the second guy said he would do it as a cash job and wrote it on a post it note.

Just pay what was agreed once they finish. Easy. Don't sweat it. Someone I know who had an extension added to their house paid cash for their plastering. Was a verbal quote. Plasterer also got messed around a little cos they had to hang battens lower to compensate for crappy existing roof. Charged a coupla hundred extra, told the owner once they found the issue. Owner said fine, has to be done, would look crap otherwise.
