Changing over an instantaneous unit, should take 2hrs or less. If your changing over from a storage unit, then it will take longer, depending where the correct sized pipes are. Most storage units are fed from 15mm pipe on both gas and cold water inlet, whereas instantaneous require 20mm feeds, so if youre changing from storage to instantaneous you have to allow for this and run new pipe from the nearest 20mm pipes on both cold and gas. Im changing over from an electric mains pressure tank. the gas pipe(about 25mm) and (cold feed (15mm)will run directly below the unit about 1.5 metres below where the unit will sit. It died and so the owners had to get a new one and have it installed outside, the guys arrived at 7.30am and didn't finish until 6.30pm it only got moved say 15 feet. The unit requires a 20mm feed. The connection points are 20mm and the specifications state clearly 20mm. Ive seen plumbers run a short piece of 20mm pipe and join on to a 15mm feed, but to do so means the unit will not work as efficiently and you would be voiding your warranty. You should make sure the plumber finds the closest 20mm cu. pipe and runs a line from there. The outlet (hot) should also be 20mm. at least for a distance of two to three meters. If all the pipes were under the unit, you would be looking at about three to four hours. In material, about 60 to 100. You need an electrical GPO nearby too, so you should take this into consideration as well. I am not sure whether Perth has its own way of doing things in regards to this.
