It's a 2.7 ceiling. And figures the cross breeze and existing ventilation will be sufficient. I've heard so many arguments for and against rangehoods outside. I don't know to be honest. We've also got 2.7m ceilings in our alfresco but it's enclosed on 2 walls You may be right if you stick with the open plan you've got but if you do go with that outdoor kitchen you're going to need to protect it from the weather. Personally I would always now put an outdoor rangehood in. As long as you go for a genuine outdoor model it won't be any more difficult to look after than a standard kitchen one.
