Upto 3m easily achievable without joint as most of the slabs comes at that length, Quantum Quartz has XL range has 3210mm for length for a single slab. Width wise anything beyond 1200mm will look squarish than a nice long rectangle IMO. Also, the gap between island and stove-benchtop is 1300mm, imho, it could be a tad too far for an efficient kitchen working triangle (https://www.sketchplanations.com/image/174951459161) . If you put bar stools on the other side, they would be partially sitting in the entryway/corridor and clearly seen from the entrance (which is not nice). And if you decrease width, you would have to adjust length accordingly. Now your bench is not really centrally aligned with the rest of the kitchen, although it forms a kitchen rectangle as it well aligned with the fridge wall and end of the kitchen, and once you reduce the width, rectangle will be "broken". Looking at the rest of your plan, you can also consider removing bench altogether and using the space for proper dining table/dining area, unless you already have it on top.
