I'd speak with the suppliers and get their opinion on the water marks, with today's products I doubt that would be an issue

Laminate or engineered stone? Is dark difficult to keep clean from water marks?
Very different product and price point.
If you can afford stone get it. It is almost standard today. I still install a few laminate benchtops (there are some fantastic laminates around) but for durability and overall look I'd opt for stone, unless you are after a style of top that can only be achieved with Laminate.
