Induction is quick, clean, controllable and leaves a nice flat surface when not in use We've had them in our last 2 houses. Would never choose gas. The rental we had while we were building had gas. We forgot how much we disliked it. My wife and I are doing the layout of our kitchen now, we are the same - don't want the sink in the island. She suggested single bowl sink last night. With your oven, what made you go for the oven heights? We are going to have 2 oven cavities, but would like to start them at 600-700mm off the ground. We have a gas stove and it's so hard to keep our 14 month away from it. My mother in law has her ovens between 700 and 1900mm off ground level and the little monster doesn't seem to notice it or go near it. It's roughly 3120mm across the front of the bench plus a 650 return in the corner where we tuck the kettle at one end and oven stack on the other end. Our sink is a double bowl undermount. My wife often leaves a drainer in one sink for hand washed items. The height of the ovens is really dictated by the height of the overheads in our kitchen. I wanted the cupboard line to right through including the cupboards above the ovens. My wife isn't super tall and realistically wouldn't want them any higher as lifting heavy things off high shelves can be problematic. The ovens in the oven stack are a 600 oven on the bottom and a 450 combination microwave above. We have another 600 oven under the end of the island opposite the other ovens. The second dishwasher option is quite popular nowadays. As far as the gap on the side of the cooktop goes you can take it right down to 100mm if you like but realistically you need a bit of room. Ours sits at 300 off the oven stack and personality I wouldn't go much less. It always looks better if the overheads are the same width as the base units but not all rangehoods fit the same width cabinet as the cooktop so you need to pick the wider of the two and then use that for the sizing of the base and overheads if you want it to line up.
