We didn't know what we really wanted other than the colour, but after looking at samples from the builder's range these stood out to us, after originally looking at subway tiles like yourself. White is definitely nice. We wanted a bold contrast between splashback, benches and cupboards though, so we went dark for the cupboards and white for the bench and splashback, so that it stood out. Hoping that it'll look great when it's done! It's too late to change anything at this stage however and that particular tile only comes in that colour. I'm not concerned with it changing colour, more concerned with the grout getting dirty. Can't say I've heard of white tiles changing colour permanently, but if they do I'll probably rip the whole lot out and install a glass splashback.
