It's the most effecient form of cooking and since the pot gets hot and not the lement it's safer and keeps cleaner. The only downside of induction versus ceramic is the price, but I think it's well worth it. If you have young children (which I don't really, now... ) it's fantastic, as they can't burn themselves if they touch them . FYI, I believe, based on previous threads, that not all cookware can be used with induction cooktops so you may need to consider this also. Hopefully someone else might be able to expand on this. Induction tops function by creating an electromagnetic field that makes iron resonate - which makes it get hot. For this reason aluminium and copper cookware does not function on an induction top. Induction tops are being vaunted as an incredibly fast and effective design. Heat up is supposedly faster than gas. Do bear in mind though, that even when the pot is removed from the electric field, the steel in the pot will remain hot. Any good pot has quite a thick base, so this can take a while to cool down. This heat can and will also transfer to the cooktop, so if someone were to put their hand on the top straight after a pot was taken off they would still know about it. I am always wary though of newish technologies (induction is new to me). Has it been around for a while? I don't want to spend the money and then find out it has been superseded by a different technology that we should be all using. I noticed the new Miele induction cooktop was around $3500, it did however include a free set of induction saucepans, I am serious. I have the Miele ones, and , yes, they came with a free set of saucepans - which is good, b/c I won't be able to use my good Raco ones on it. .......(good excuse to buy some new ones - shhhhhhh, don't tell DH!!!) We were given them as a wedding present (so they're 16 and 1/2 yrs old!!!! ) I can see a copper coloured layer btw the silver on the pan itself and the very bottom .
