I chose 20mm stone not as a cost saving thing, but because I think it looks better. The kitchen had waterfall ends also done in the 20mm, and the comments from friends and family all think it looks great. But as with anything, it is down to personal taste. I can not see that thickness of your top would have anything to do with chipping. It takes a fair hit to damage a quartz top, so if you whatever you do to damage a 20mm top, will probably do the same to a 40mm. Small chips are repairable regardless. Oh and enjoy the servo drive!
