Just wondering if anyone knows or has been in the cabinet making business before because iam interested in knowing if cabinet makers buy their granite each slab at a time when they get orders or do they stock some granite themselves?
Any feedback would be very helpful.

I don't know of any cabinet makers that actually keep stone in stock, as it needs specialized machinery to process.
If a cabinetmaker provides a kitchen "with granite tops" they mostly sub or refer the work to a stone mason.
The stone tops need to be measured for once the kitchen is installed, so a cabinetmaker can rarely get the tops (for a domestic job) cut in advance. Instead, once the kitchen is in, the mason (or cabinetmaker) will make some templates from which the tops will be cut.
The resulting tops then get milled at the masons before delivery for fitting.
