Is it smaller but room for toaster/jug etc. Or just a larger walk in pantry style ? I know people who have their main fridge in the pantry. But this had limited the space in the pantry - imo. Don't think it would limit space. If you have the space you can "waste" some ... ie - if you intend using it as a work area you will need space to move about. You don't want to be cramped in - you wouldn't do this in a kitchen. Not knowing your size - but assuming it is larger than smaller - based on what you have said - I'd go open and good sized shelves. But - top ones have to be tiered - so you can see - unless you plan to use a step ? Are you storing wine on bottom level - floor ? This can be a good idea - often cool. It really depends if its built by a builder or cabinet maker! A builder will just give you a poor attempt and the shelves will need to be fixed. A cabinet maker will have you 100s more options and you can easily have adjustable shelves without problems.
