I'd like to replace it with a stone but don't know what my options should be given the length as from your previous post it's too long for some stones and that granite could be the best way to go? Do you have an email address or contact number that I can get you on? We are in Sydney too...I can also send you a pic of our current kitchen? I'd still like to keep all the kitchen drawers.... You might find some granite the length you want. This has been done in my father's kitchen (although I'm pretty sure that their bench was longer than yours) and you actually cannot tell that it is 2 different slabs unless you are looking closely and have been told where the join is. This is because they had a very good professional come in and undertake the work for them. I recommend contacting someone, like Spaceworks (www.spaceworks.com.au), who does this for a living.
