I'm a little confused about the thicknesses to choose from.
Originally we thought 40mm but have also been given a quote for 30mm SOLID.
Which is better???

It just depends on which thickness you like. That's not really an issue. 10 years ago everyone was putting solid 30mm granite in there kitchens. My stone masons don't care which thickness you use. For 40mm I use a stone mason that mitres the front edge (rather than sandwiching two sheets of 20mm together). This way you do not see a line in the front edge of your top. It's ok with some colours, but others the line really stands out. I haven't heard of stone masons not liking 30mm due to the weight before. As 30mm is usually more expensive then 20 or 40mm, I would have thought they would love selling it!
