Single cut out is more practical... although I'm having 2 holes because a) I hate the look of water drops sitting on metal and i'd be wiping it every time my kids so much as look at it and b) I chose 2 different sized sinks - one bigger one that'll easily fit the roasting pans so no need for chipping the stone. It's personal taste and what maintenance benefits you see for your personal usage.
