I put 10mm into all the kitchens I build and have never had any problems. I depends on how long your finger nails are. There are no right or wrongs here, just what works for you. Don't worry about your nails, I never open these doors with my hands vertical. I tend to flip them open with my index finger in a horizontal position. You need to remember when your grabbing the door to open it you fingers will be at around 30 degrees to the vertical, so even if you had 15mm long finger nails you would still have plenty of skin on the door.
