I said the extra costing is usually due to slabs/material not the actual labour of the job.
My quoted statement from you is that overhangs and waterfalls add price drastically when going from 20mm to 40mm. It's not the 20mm to 40mm that is drastic it's the increase in material.

It is when you have a 300mm overhang on an island unit!
Take my kitchen for example. The island unit is 1100x3200mm with a 350mm overhang and 2 x waterfalls.
Going from 20 to 40mm there is the following required,
1/450x3200
2/450x900
1/100x3200
2/100x900
There is alot of extra material required just for the overhang and this plus the labour adds to the cost.
