apparently animal protein gets stuck on the wood and into the grooves made by knives. Best cutting boards are plastic, marble or glass. We oil our wooden board fairly reguarly. DH tells me that nutritionist recommend we do get some 'bad bacteria' in our stomach to help build resilience. Prefer cs for durability and looks. Can't recall the mechanics of it, but I'm pretty sure this was in New Scientist or a similar sort of publication. As for cutting boards, I don't think marble or glass boards are recommended if you want to keep your good knifes working properly. I also like to stay away from plastic ones that have been treated against bacteria (what with??). In Jamie Oliver's latest TV series (Jamie at home) he has a huge wooden top on his bench that doesn't seem to be sealed or anything - chops meats, veg etc on it. I wonder how it gets cleaned? The grain on the end sort of gives it away.
Glulam b/tops arent cheap. They probably average the same as a catagory 3 30mm granite b/top but it really depends on what timber you choose. I wouldnt go using my new glulam b/top as a chopping block tho, I'd get myself a proper chopping block. We used to get all out timber b/top from a mob up in Nabiac just south of Taree NSW. Cant remember the companies name atm. What have you tried that has too much salt? I've cooked a fair few things from the TV show and they were all pretty good - nothing was over-the-top salty. After 4 years - we're in!
