There are just too many potential pitfalls, including everything that was mentioned before plus additional plumbing and electrical costs to disconnect and re-install Sink, Cooktop, etc... Not to mention the chance of damage when you start removing the not insignificantly sized benchtops. I just wouldn't do it and instead, try to convince the builder to let you have your preferred benchtops in the first place. You can really use anything you want the main consideration would be how it looks once painted/finished - or the look you want.
