I have always wanted a couple of GREAT kitchen knives but balked at the prices . That's why I've never looked into what the better brands are. However, Xmas is coming up & better my kids get me something I can use than something that gets tossed in a drawer So...... 1. What are the best brands without breaking the bank? 2. Which knife styles do you feel are a necessity ? There are so many choices nowadays and everyone will like something different. For example, I know Global are a good knife but I really do not like the feel of them in my hand. I like a heavier knife with a thicker handle. So I would say, head down to a specialty kitchen store and try a few out, find a knife that feels comfortable and balanced in your hand and is drop forged, likely German or Swiss (although there are some fantastic Japanese knives on the market nowadays you could look at). In terms of what you need, a Chef's knife I would regard as essential, don't get one that is too big for you. We have a carving knife, a paring knife and a utility knife. If I had to get rid of one it would be the paring knife because we do not really peel with knives. Never put your good knives in the dishwasher, store them in a block or on a magnetic strip, learn how to use a sharpening steel and get them professionally sharpened once a year. Forged knives are generally considered the best although I believe some of the Japanese knives are metal fusions and some stamped knives rate very highly. Personally I don't think brand matters so much, the good "brands" (Wusthof, ****, Global, Furi, Shun, Zwilling etc) all make great knives but it comes down to how they feel in YOUR hand. So go and try them out. See if you like the weight, the balance and how the knife fits in your hand. If you get a knife that feels right in your hands then the brand should not matter too much at the top end. Then my darlings can front up the cash Built the Eden Brae Cambridge 34 Family with Boston Corner Facade Re: Kitchen Utility Knives 8Oct 20, 2010 12:20 pm I went out last chrissy & bought a blocked set of 5 Scanpan knives,love em We were doing the early chrissy lunch for one side of the family & i was busy doing all the bits,trying to cut something & had had enough,drove down & bought them then,well worth the $$$$ I do not allow our kids to use them though,way too sharp! Did the try in the hand thingy,they felt very comfy,the right weight etc. I wash them by hand as soon as i have finished using them.
