My suggestion would be to consider replacing the floor cabinets either side of the stove with drawer sets - 1 small 2 large or 2 small 1 large for all your utensils and cookware. Specifying drawers effectively can increase your usable storage space by 30%. I've designed most of our kitchen to have drawers, they make it so much easier to store and access the things you need. Do you think 3 equal sizes will be ok? so about 290mm each draw? and do you think this is the best option. I have no idea into the height of average pot sizes. The humungous ones can sit in the walk in pantry. I haven't actually done this yet, but my plan is to take everything I want to store out of my existing cupboards and map out the loungeroom floors into "drawers" and do a trial run.
