I agree with your comments about tiles adding interest. We were going to have a glass splashback but when we went to our tile selection appointment we looked at the tiles just to compare and we found a 100 x 100 glass mosaic that we just loved. It was still an upgrade but cost $700 instead of the estimate of over $2000! Our tiling is being done now but the splashback is being done last as they have to wait until the benchtop goes in which is supposed to be next Thursday. I can't wait to see it all! Best thing is, it was in the discount area, so instead of $35 per tile it was $20 per tile (approx 300 x 300mm). We bought their remaining stock, so we spent just over $400. Not sure what the laying costs will be, undoubtedly more than normal tiles, but it's still a lot cheaper than a whole glass splashback. I'll try and find a pic of it to post. I find with this size you keep good symetry between the size of the space and the tile. Also its not such as small tile with a lot of grout to worry about. Od - I think that the white grout looks really fresh - ties it in with the cupboards IMO. Some things are worth waiting for.
