I'm thinking of angling the stove / hotplates into the corner. I'd angle it at 45-degrees and angle the counter to match. Has anyone done this (or seen it). Are there any dangers I should know about ?

The floor corner unit underneath the top (assuming it is 6oo wide) will need to be 1000 x 1000 along the walls. One thing you do need to consider is the triangular corner behind the cooktop. This will effectively become "dead space" as you can not really reach across your cooktop to access this area (when you are cooking). One effective option for this is to raise the back corner into a shelf area, making it higher than the top in front of it. This allows some useful cooking items to be placed behind the cooktop and still be accessable. Alternatively you can also place a false wall across this corner to deal with the dead area. (I hear that glass is the easiest to clean).

Re your "fill in" wall; great idea, and yes a splashback is a good thing to hang behind a cooktop across a corner. Glass is a great splashback material and worth the investment. One tip, if you want to save costs on a glass splash try to avoid placing too many power points in the glass - this is where costs mount up. Consider mounting GPOs elsewhere, such as underbench or inside cupboards. Another advantage of filling the void is being able to mount a range hood above the top and still against a wall. If you are lucky you will also be able to use this void to duct your range through, as well as any other troublesome services you might have. Cheers for the shoutout, I hope it goes well for you. I have this horrible 70's kitchen with x 4 burner stove literally stuffed into the corner and a high cupboard beside it. It's like cooking in a cavern.
