I am assuming it needs to be a little sloped for water to run? but this just looks crazy uneven? any advice would be appreciated thank you! A certain degree of slope will be required for water runoff but based on the pictures it does look quite noticeable. It also looks like a bit like the slope is not evenly dispersed. It is definitely worth raising the issue with your builder before tiling as it will be easier to rectify and level now if necessary.
