Owner building is not for everyone, and it could take longer as a project builder. If you feel too old to do it as you say, then just don't do it. Just see if you can do things you can do, after hand over. If you can then you are likely to save some money and get what you want, however most cookie-cutter builders will not let you leave things out for after handover, or at the very least discount the price on things they don't install. One thing that you might like to do is to just put in batten holders for all of your lighting, especially if you are a single storey home, then after you've moved in get all the fancy lights that you want. At that stage you'll have a far better idea of what lighting that you do want, rather than trying to guess off of a plan or display home.
