If they are only partition walls you can blow out to 60mm centres. As for the ceiling it all depends on the roof framing/truss setup. In most cases you will find that the ceiling is either screwed directly to te bottom chord of the truss or fixed to battens which in turn are fixed to the bottom chord of the truss. Unless yu have a suspended ceiling, i will be a big job raising ceiling heights. If the roof is pitched you will be ableto raise it, however, it is a BIG job, as you wil need to raise all of the ceiling joists. In doing so you may find that the roof line will prevent you from lifting too hight, which means cutting the ceiling joists to follow th roof pitch, and would need to bolt the ceiling joists through to the rafters.
