Is this reasonable to ask for or will it signal to our builders that we are distrustful? You firstly need to examine your contract in detail to see what it says about variations. That said, it is your build and your money, and your relationship with your builder should be one of openness and honesty. As long as you calmly and respectfully outline any concerns you have and propose that as a reasonable way to address those concerns, I can’t see why they would be resentful. If they are resentful, it might say something about your relationship and what you can expect from their workmanship. If your patio is going to be 35 sqm then that's going to need Council Approval.
