I can’t seem to get the tap off this shower to change the washer. There’s a little circular hole filled with a spongy thing, which I’ve tried poking with a screwdriver and Allen key while twisting, pushing and pulling the tap but to no avail. Any ideas would be most welcome!

You'd normally expect a grub screw in that little hole. If there isn't one then maybe it has fallen out at some stage and they have used a little bit of silicon to stick the handle in place.
That may explain why it feels spongy in that hole.
Have you tried gently levering the handle out.
Can you take a picture of the whole tap from front on.

Thx chippy, have added a few more pics to the main post
Can you post the pics. In a new post. When you edit an old post it seems to break the link.

It looks like they might be Phoenix Rush tapware or similar. Are they 3/4 turn ceramic taps?
If it is then it is definitely a hole for a grub screw that then has a little cap over it.
If it's not there then I'd think someone has lost the screw and used a dob of silicone to stick the handle. The only option will be using a lever to slowly pry it off.
