San Selmo Reclaimed Original - Mortar Joint

Hi,

I am planning to select San Selmo reclaimed original for the fascade of my build.
I have seen many photos on line of the brick varying from a rustic to a neat finish. I am a fan of the neat finish.
I’ve been reading conflicting information about raked vs flush mortar joint. What joint type do I need to specify to achieve a neat finish with this brick?

Thanks in advance,
Em

Do you think this kitchen is original

Kitchen Corner

No. It's not original. Circa early to mid 90s would be my guess and maybe even as late as early 2000s
