Knockdown and rebuild - existing solar panel?

Finally, we decided to KDR.

We have solar panels installed about 2 years ago, my plan, for now, is to uninstall the panels and store them in the shed and put them back once the building is done.

Does anyone have some similar experience or suggestion, please?

If they are only two years old and stored well then they should be fine. Your sparky should be the guy to talk to regarding extra panels and inverter if you are looking at upsizing if that is a council or SA govt requirement.
