Perhaps my oven is different, but in normal mode, there is no steam escaping as it self vents. Of course when we use the steam function, there will be steam, but not severe.

It isn't hard at all we did it too with some LED strip lights - it makes such a huge difference we'll definitely be adding it to our build when we get overhead cupboards eventually

You cannot reduce size of flue. Flue size is specific to rangehood. You can get flexible flue to run into ceiling space if timbers are blocking the route of the flue.
