Just keep in mind you will need room either side of sink for stacking dirty dishes to wash and then to put them on the otherside when done. I would personally do the middle if there is no dishes out on the counter then you should have enough room for food prep

Yes it is crazy the things they charge. I spoke to the lady at the tile place and she said its because the tilers charge more due it being more work so they pass the price on...
