Personally I'd be looking at terracing it at about the halfway point...or enough to put your entertainment area at the top level and a lower tier garden. Sorry, I can't see the need for the unnecessary complication and the potential hygiene issue around the lid, bench and bin interface. I always use a one of those thin flexible chopping boards as a minimum and empty into bin straightaway, the most that's left on the bench is a few crumbs. I just thin...

I dont think people sign contracts to board. Although not a "contract" I'd still document the expectations (for both parties) on outgoings, payment frequency, etc. It's not enforceable but at least you can agree on a single point of truth.
