In regards to the mortar, I think you will find a disclaimer somewhere in your contract that states clearly that the colour of 'standard' varies as it is a mixture of cement and sand. I specifically remember reading it. With standard mortar, you can't really tell what colour it is going to be until...

No I am not telling you that. I am telling you standard depends a lot on the colour of brickies sand they use and "standard" means they use whatever colour sand is delivered. "Standard" is not a colour of itself. BTW I am not attacking you, just trying to assist with an explanat...
