I doubt spirits bottles would be from tradies. Pre-mixed cans/bottles of JD, JB etc, yes, and beer, yes, but spirits bottles would more than likely be neighbours with excess rubbish after a party, as suggested above.

In that case, it would really bother me! If I was doing them myself, I'd centre the tile across the doorway, and have equal ones eiter side. So if they won't allow double doors on it, have them fit the architrave & no doors. So they match, get them to put 2 aside in the garage. Then after handover, paint the doors, fit the hardware, and put them up.

I would only consider doing it the other way around. Ask for the last 10% of the contract price to be the flexible 'bonus' that they have to earn. Ours is about that - for 2 of us. We don't have gas, so everything is on electricity. R/C split runs for a couple of hours each evening in the 3 winter months, and probably 4-6 hours for the hotter summer months. 2 fridges, a computer on 24/7, and only a handful of energy-sapping halogen downlights....

I wouldn't be using the gyprock in a high humidity area either - Like the outside, I'd go with either blueboard, or to reduce cost, one of the wet-area fibre-cement boards designed for lining bathrooms - like villaboard & the like.
