So to revisit the cost aspects, inceasing ceiling height to 2700 was $4,800 for a single storey and was $700 to upgrade door heights. All doors taller (including pantry) except linen/broom and wardrobes. As many have mentioned, however, door height is definitely a personal choice. Being a bit over 6...

In my opinion, go the 2700 and go higher (2340) doors to match. I'm not sure were the $12,000 comes from - is that a two-storey? In Victoria you pay stamp duty on the land, not on the house (since it isn't built). I'm joining this debate late, but I have been in the same situation (i.e. bank re-valued six months after unconditional approval only to devalue by approx $20,000 - nightmare - and this was after the land settlement date! This was for land/house). Your financial application really only lasts 3 month...
